2005-01-06 Emily

I finally heard from Emily's doctor regarding the paperwork I had sent a while back. Her teacher and I had to fill out questionnaires with questions relating to her attnetion span etc. Well, I should say I heard from his secretary but we have a followup appointment scheduled for next Friday...on the same day as her appointment with the specialist she is seeing for this. Yay for making one trip to Children's...even if it will be at 8:00 am.

I am looking forward to the appointment(both of them actually)but obviously, if he wants to see us, he must have some concerns about what the papers show. If there was nothing wrong, wouldn't he just say so?

And just a random thing...I never in a million years realized how deeply I could love and feel until I became a parent. Seriously, I physically ache for her and what she has been through and will have to go through...for, well forever probably. Why couldn't all of this just happen to me instead? I would gladly endure if it meant she didn't have to.

2005-01-06 Snow

Emily has a 1 hour delay this morning due to the snow that is currently falling. It seems to be coming done pretty good but, it is supposed to change to rain soon.

My car is covered though and guess who took my snow brush? Yup. For some reason, Ryun took his out of the car when he didn't need it and now can't find it in the shed. So...he took mine. I am probably going to drive Emily down the driveway to the bus stop so I will have to use a broom or something to clear my car. Fun.

2005-01-06 Chicken Fingers and French Fries

Have I ever mentioned how much I love Bisquick? Not just for pancakes, no it isn't. I have made some of my best dinners using recipes found there. Here is the recipe...and a picture to boot!

Ultimate Chicken Fingers

2/3 cup Original Bisquick� mix
1/2 cup grated Parmesan cheese
1/2 teaspoon salt or Garlic salt
1/2 teaspoon paprika
3 boneless skinless chicken breast halves, cut crosswise into 1/2-inch strips
1 egg, slightly beaten
3 tablespoons butter or margarine, melted


1. Heat oven to 450�F. Line cookie sheet with foil; spray with cooking spray.
2. Mix Bisquick mix, cheese, salt and paprika in 1-gallon resealable plastic food-storage bag. Dip half the chicken strips into egg; place in bag of Bisquick mixture. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat with remaining chicken. Drizzle butter over chicken.
3. Bake 12 to 14 minutes, turning after 6 minutes with pancake turner, until no longer pink in center.




Yummy. They came out great. The only thing I may have done differently would be to add just a bit more garlic salt to give it a little extra zing. That, and just becasue I love garlic. And chicken. There are just so many various ways to cook chicken.

Also, here is a picture of the homemade french fries I made to go with the chicken fingers.

Can't you just see the grease? Yeah, this definitely was not the healthiest meal I have ever cooked but it sure was good.
